No hotel better sums up the glamour and grace of the French Riviera than La Chèvre d’Or. The resort hotel is built into and around the elegant hilltop town of Èze. Each sumptuously decorated suite is a grand apartment with a panoramic view of the coastline. It’s a habitual favorite of royalty and A-listers, who adore its privacy, and the extremely personal service: there’s a ratio of three staff members to each room or suite. The outdoor spaces are as grand as the indoor ones, thanks to 38 terraced gardens that drip down the hill towards the Mediterranea. But the best thing about La Chèvre d’Or is its eponymous double-Michelin-starred restaurant overseen by chef Arnaud Faye (fixed-price menus 140€–220€). Experimental dishes include a vegan square decorated with an edible garden of herbs and flowers; San Remo shrimp wrapped in oyster-infused gossamer-thin pasta; and roast lamb served with chickpea pancakes and lemon leaves.
