Maki, nigiri, and futomaki rolls come in “fusion” combinations that pinch ingredients from various Asian cuisines, notably Vietnamese. The likes of a salmon, avocado, and flying fish roe “inside-out roll” are freshly made while you wait, and beautifully presented. Spring rolls—wrapped in ricepaper, with fillings such as chopped shrimp, spring onion, and cilantro—really zing. They also make their own fruit cocktails, served with or without a shot of liquor.
