The experienced chef who created this restaurant has paid unusual attention to flavor and ambiance, and those are the two main reasons you’ll want to eat here. Chef Shetty has created a fusion menu where, as he likes to say, East meets West, but here they don’t just meet, they mingle in unexpected ways to the delight of the full range of your palate. Diver scallops come with grilled mango slaw and tomato chutney, which would be a nice combination, but here the dish goes a step further—the scallops are roasted in a clay oven and topped off with a chili mandarin drizzle. Shetty has mastered the art of blending spices in unique dishes, and they are offered in small portions, which allows you to try more than one.  With offerings like jerked paneer with cucumber slaw, this food represents the latest in contemporary Caribbean cuisine, and it is not surprising that Chef Shetty is currently the president of the Cayman Culinary Society.

The long, curved glass bar that is blue most of time, can be lit different colors and is the main attraction that makes the ambiance here magical. The glass plates on the table, the open kitchen with its dark blue hanging light fixtures, and the large glass doors of the wine room all add to the elegant atmosphere that compliments the experience of this exceptional food. 

This restaurant is also a lounge, offering a menu of small dishes beginning late in the afternoon until 11pm, and you can stop by for a drink and a snack anytime, or even a nightcap. Miguel is an engaging mixologist who will make you feel at home with the other guests. The Asian Passion, made with Absolut vodka, elderflower liqueur, and lychee juice is one of his specialties. You can also order dessert or one of the unusual specialty teas that comes with a presentation worth the price. The roasted banana crème is made with a local rum—Seven Fathoms—and sits on ginger snaps with burnt Italian meringue. 

Sunday Brunch is a la carte and you can choose small plates, as well as eggs, pancakes, and french toast. The weekday lunch menu is extensive and a wonderful way to try the food here at prices that are more affordable than at dinner.
