Established in 1995, Hoa Sua is a training school for disadvantaged youth that prepares them for a career in the hospitality industry, particularly cooking and waiting staff. It might sound like you're taking a risk, but in fact everything is carefully controlled so that there are virtually no slip-ups with orders, and the staff are super enthusiastic and eager to help guests in any way. The menu includes both Vietnamese and Western dishes, and the setting, in a colonial villa near Truc Bach Lake, is quite elegant, with a grand staircase leading upstairs and classical art on the walls. Daily specials are chalked up on a blackboard, and there are set menus and combination dishes as well.
