Didier Corlou is one of Hanoi's best-known chefs and he has now spent a couple of decades experimenting with fusions of Asian and Western cuisines. The result of this experimentation is a constantly changing menu at La Verticale and at three other restaurants that he runs in town (Porte d'Annam, Madame Hien, and DC Bistro). La Verticale is housed in a three-story building with shuttered windows and a cute rooftop terrace with good city views. Enjoy duck muscovy or rice field perch from North Vietnam served in a combination of spices that brings out the best in each dish.
