In Hua Hin’s night market, there are nearly a dozen stalls with ice-packed fish, ready to the hit the grill, and they’re all nearly identical at first blush. Lung Ja is the only one that always has a crowd; savvy cooking techniques have earned them a loyal following. Fresh seafood arrives daily—grouper ready for the fryer and jumbo prawns that stay plump when grilled—but it’s the large lobsters that are the star of the show. Priced by the kilo (about 1,500B per kilo), the lobsters are steamed first and then quickly grilled, which leaves the lobster tender, juicy and full of flavor. Complete the meal with steamed garlicky vegetables or fried rice.
