This super-slinky beachfront establishment, the signature restaurant of the Four Seasons Resort Bali at Jimbaran Bay, may be second mortgage material, but it's worth it for a 5-star blowout (reservations are recommended). Sweeping views look back across Jimbaran Bay and the palatial setting is stunning, an ultra-contemporary Asian dining compound by a top Japanese designer, accented with earthy granite, stone, and timber. Grill house-focused dishes highlight freshly caught seafood and prime imported meats, accentuated with seasonal local organic produce. A fine Cold Bar and a Charcuterie Corner showcase freshly shucked oysters and Spanish-cured jamón respectively. The food is simple and light, with gorgeous flavors.  Daytime has a chilled-out beach club vibe, with all-day grazing on mini-Wagyu beef burgers, sushi platters, and wood-fired pizzas indulged in on the beachside open-air patio (note that daybeds and infinity-edge pool dips will cost you, a lot). DJs play jazzy sunset sounds Thursday to Sunday. Lazy Sunday brunches offer reasonably priced, family-style options. Sundara comes into its glamorous own at sunset, dramatically ablaze with fire cauldrons and abuzz with its vibrant open kitchen.

Try the avant-garde cocktails, custom-designed by a world-acclaimed mixologist, Barcelona's Javier de las Muelas; his wasabi martini and kumquat mojito are two prime attractions. Don't miss two-for-one cocktails with bar bites (5 to 7pm daily) on the upper floor's colonial-inspired lounge bar, which has bay vistas that are to die for.
