Baumanière

Baumanière is the name of the cluster of fabulous inns, guesthouses, and authentically Provençal hotel accommodation dotted around the medieval town. Each section of the diverse hotel boasts kitchen gardens and swimming pools, amid scenes of pastoral bliss reminiscent of a French movie set. In terms of dining, Chef Michel Hulin of La Cabro d’Or (set menus 80€–120€) delivers intelligent, innovative Provençal cuisine with a lightness of touch. Diners savor the unctuousness of Mediterranean langoustines, the crispness of roasted red mullet, the froth of fresh pea velouté, and the crunch of slow-cooked suckling pig. The main Oustau de Baumanière (set menus 100€–165€) building has hosted the likes of Queen Elizabeth and Vanessa Paradis and also purveys an even more acclaimed (and more expensive) restaurant than the Cabro d’Or site nearby. It holds an unrivalled three Michelin stars.
