Madrid is not renowned for paella, but if you crave the famous dish that originated in the region of Valencia on the east coast, this lively tavern is the place. You can choose from a range of styles from the city of Alicante, including the classic señoret, with crustaceans, mussels, and fish; the more traditional version with rabbit and mushrooms (conejo y setas); or fideuà, made with fine noodles rather than rice. Prices are quoted per person, based on a minimum of two sharing, and plenty of other seafood and sharing dishes are available. The location, near Las Ventas bullring, is a bit off the beaten track, but the formula has proved so popular that a new branch has opened on busy Cava Baja in the city center.
