The closest thing you’ll get to epicurean dining in Manizales, there’s a lot to love about Vino Y Pimienta. Each dish is crafted from well-sourced, local ingredients and presented with surprising artisanal flair. Entrees lean toward fish and seafood with creative sauces, preparations, and interesting combinations of flavors. There’s a perfectly executed seared salmon, succulent crab claws, a signature creamy shrimp risotto and desserts that are worth saving room for. The wine list is a well-curated ensemble of Latin American wineries with a bottle for every taste and budget. Service is hard to fault, and tables are fitted with crisp white tablecloths and polished silverware. While it’s quite expensive for this town, it’s a steal by U.S. and European prices.
