Let’s get this straight: this gourmet restaurant, open since late 2022, is sited in Marseille’s maximum security penitentiary where some of France’s longest serving prisoners are jailed. All clear? More importantly, the restaurant is a winning social project where top chef Sandrine Sollier (a veteran of Marseille’s leading kitchens) teaches inmates cooking, service, and teamwork skills. Dishes, like slow-baked beef chef in carrot jus, are a delight. Security is obviously tight but reserving a table and entering the city’s toughest jail are no harder than booking a flight and going through airport security. This is a fine dining experience you would struggle to replicate anywhere else in the world.
