Although Wailea is hardly lacking in Italian eateries, it’d be a shame to miss this gracious restaurant and wine bar, nearly hidden in a small shopping strip just below the Residence Inn. Some 30 wines, mostly from Italy and Northern California, are available by the glass, while the 200-plus list of wines by the bottle includes rare Amarone, Barolo, and other Italian varietals from amiable chef-owner Matteo Mistura’s personal collection. But you don’t have to be an oenophile to appreciate the chef's deft blend of Italian cuisine and local ingredients, especially fresh fish. His poke Italiano adds black-ink rice chips, fennel, and cucumber foam to the more traditional ahi tuna and avocado, while Maui Cattle Co. beef, a tomato ragu, and homemade pasta anchor the lasagna. The catch of the day comes adorned with heirloom cherry tomatoes, Carnaroli risotto cake, mushroom trifolati, and an artichoke-thyme puree. For lighter eaters, Chef Matteo's salads can’t be beat. The lounge offers wonderful happy-hour specials, all $8 apiece, from Italian and tropical cocktails to 5-oz. wine pours, along with savory items such as fried calamari, potato-pesto pizza, and kale quinoa salad with ricotta salata and pumpkin seeds.
