The Best Pecorino Around
Artisan sheep's-milk cheese maker Cugusi, Via della Boccia 8 (2km/1 1/4 miles outside Montepulciano on the road to Pienza; tel. 0578-757-558; www.caseificiocugusi.it), which supplies Acquacheta among other local restaurants, sells direct to customers from the farm. The vast range includes pecorino at every aging stage (from fresco to stagionato) as well as whole or part cheeses wrapped in hazelnut leaves, or herbs and oil, or infused with grapes (known as ubriaco, or "drunk"). The farm store is open daily (closing between 1 and 3pm for lunch) and accepts credit cards. They will wrap it sotto vuoto (in thick plastic shrinkwrap) for long-life storage.
