Avery Island, south of New Iberia, sits atop a gigantic salt dome and the oldest salt-rock mine in the Western Hemisphere. However, it's not salt but pepper -- fiery-hot peppers that grow especially well here -- that's brought Avery Island its greatest fame. Tabasco brand pepper sauce, loved all over the world, is made by a close-knit family and equally close workers who grow the peppers and then nurse them through the fermentation process developed by Edmund McIlhenny, founder of the McIlhenny Company. Tour the Tabasco factory and visitor center, which includes an old-fashioned Tabasco Country Store. Expect to spend less than an hour.
