Because here you get the real stuff: baby corn that actually has a flavor, oddities like dried catfish (crispy, salty, and addictive), and dishes that perfectly balance sweet with sour, salty with spicy. On that last note: Take it seriously when they ask you how hot you want your meal. I left the restaurant after my last visit and almost walked into a telephone pole, I was so lightheaded from the powerful spices I’d just eaten.
