The village of Tafalla, just 5.5km (3 1/2 miles) north of Olite, is famous for the bounty of its fields and gardens, and Axten Jiménez and her children, Beatriz and Nicolás, base their cuisine on those fruits and vegetables. The elder Jiménez is famed throughout northern Spain for her research on the traditional gastronomy of Navarra and the Basque region, and the restaurant’s interpretation of those traditions combines the hearty flavors with a picture-perfect light, modern presentation. Start with Túdela artichokes grilled with Pio Negro potatoes and garlic shoots, or baked lobster with fresh pasta, bits of Jabugo ham, mushrooms, and a touch of truffle oil. Braised beef cheeks on creamed potatoes or hake with onion sauce makes a good main dish. The restaurant offers an unusually large selection of desserts, ranging from warm chocolate cake with banana ice cream to a classic plate of Spanish cheeses.
