These are hard-shell blue crabs prepared Maryland-style: steamed with Old Bay seasoning. Unlike at crab houses in Baltimore, however, Billy and Eloise remove the crab's top shell, clean out the "mustard" (intestines), and cut the crabs in two for you; all you have to do is "pick" out the meat.
