The Godfather of Lyonnaise Cuisine
All France mourned the 2018 passing of Paul Bocuse, a.k.a. the Godfather of Lyonnaise cuisine. Foodies from all around the globe are now making a pilgrimage to his culinary headquarters in Collonges au Mont d’Or while his international restaurant empire still stands. Take the N433 north of Lyon to Restaurant Paul Bocuse, 40 quai de la Plage, Collonges au Mont d’Or (; tel. 04-72-42-90-90) so you can feast on his legendary black-truffle soup. The late Bocuse was the only chef in the Lyon area to boast an unbroken run of 50 years of three Michelin stars. Be warned that you have to book months in advance to be sure of a table.
