In this little Craftsman bungalow on downtown Phoenix’s Heritage Square, James Beard–award-winner Nobuo Fukuda serves his distinctive style of Japanese food. The menu lists barely more than a dozen dishes, and not one can really be considered sushi, so don’t show up expecting to get a California roll. Instead, try less well-known Japanese specialties like shiromi (white-fish) carpaccio, house-cured salmon, or okonomiyaki (a savory pancake made with pork and seafood). While Nobuo has long been known for his wine pairings, here he also features rare Japanese microbrews.
