Resort dining is generally hit and miss, but this gracious, exquisitely operated restaurant combines a unique setting with first-rate food. Located within the Mediterranean-inspired Royal Palms Resort on Camelback Road, with that street’s namesake mountain looming overhead, T. Cook’s is surrounded by decades-old gardens—there are even palm trees growing through the roof of the romantic, ravishingly comfortable dining room. The menu—variants on Spanish food including a delectable paella and meticulously prepared seafood—is sublime. Desserts (including an insane aggregation of pistachio gelato, dark chocolate, and brandied cherries, or a Catalan-style crème bruleé) are heart-attack-inducing, and the service—in a town where, even at the best restaurants, waiters interrupt conversations, proudly present wine in glass decanters, and snatch dishes away the second you put down your fork—is the soul of discretion and tact.
