Macayo’s is a Valley Mexican chain of some 7 decades’ standing, with locations from Tucson to Vegas; this one-off outlet is slightly different. Named after its founder, it’s downtown-specific, with a distinctive light take on this sometimes heavy food. Ignore the rest of the menu, and look over the platos especiales. Choose your form—taco, burrito, enchilada, bowl. Then you chose your meat (you can’t go wrong with the green chili pork) and the particular sauce (go for the tomatillo). Macayo’s does the rest.
