A French chef born on the Italian border, Lanteri offers Franco-Piedmont cuisine, with some influences from nearby Liguria. To truly get into the Piedmontese spirit, try his whole-grain egg tagliatelle with snails and aromatic herbs; other creative dishes include pappardelle pasta made from chestnut flour or steak tartare served with trout caviar and a fennel salad.
