This is among the very best restaurants not only on the Caribbean coast but in all of Costa Rica. Chef/owner Ilario Gionnoni is a master and a marvel of perpetual motion. He is constantly innovating; raises his own chickens and pigs; and grows as much of his own fresh fruits, vegetables, and herbs as he can. The menu is long and varied, but if you simply ask Ilario what’s best that day—he won’t steer you wrong. Among the memorable dishes here are shrimp cocktail with a beet-based spicy dipping sauce; and rooster ragù over homemade gnocchi. The large, multilevel, open-air dining room is dimly lit and romantic, with heavy wooden tables spread widely for privacy.
