Texas-style barbecue and taqueria-style tacos way up in New England, run by Austin transplants Pliny Reynolds and Melanie Kratovil. Meats are house-smoked daily, and the barbecue board usually features fall-off-the-bone pork ribs or smoked brisket kissed with the house seasoning (coffee grounds, brown sugar, and a few other spices). The carnitas tacos are not to be missed. Terlingua departs from its roots in the Lone Star State by putting plenty of seafood on the menu; the ceviche, with Maine kelp and watermelon, is a highlight. The restaurant has both indoor and outdoor seating (even in winter, with firepits and hanging, natural gas–powered space heaters), and its outdoor bar is handsome and well-stocked with great tequilas, slushie drinks, and local beers. Terligua is very lively on weekend evenings.
