You will not and should not miss this incredible Québec landmark, fondly called the “castle” or le château. Its majestic spires and gabled rooftops have been visible along the cliff overlooking the St. Lawrence River since 1893. The interior is similarly grand, made more so with a recent refurbishment of all 618 guest rooms, the expansion of the pricier Fairmont Gold floor and services (dedicated concierge, bar, and breakfast area), the addition of a luxury spa, and a re-tooling of all on-site dining and entertainment. The classy Le Champlain Restaurant underwent a major facelift over the last year and you can be the first of your friends to try the brand new jazz bar and bistro Le Sam, or the cozy 1608 wine bar. Note that while hotel construction is slated to end by mid-2014, you may want to call ahead regarding the presence of scaffolding or the chiseling of mortar if that would affect your stay.
