The menu at the Lazy Parrot’s main restaurant has a pan Caribbean focus that is heavily rooted in local cooking thanks to a new, and very impressive, chef in the kitchen. With fresh local herbs and produce driving the selections, the menu changes frequently, but you may find seared shrimp in a coconut-spice rum glaze with green rice, tuna in a mango salsa and garlic mashed potatoes, or grilled chicken with shallots and white wine on the menu. Some think the mofongo served here is the best on the island. The second floor restaurant also serves up panoramic views of the hotel’s blooming grounds and the green hillsides surrounding the town.
