Chef Andrew Weissman burst onto the local dining scene some 25 years ago with Le Reve, earning raves in the national press for his world-class cooking, knockout presentations, and impeccable service. The latest showcase for Weissman’s talents is this fine dining room at La Cantera resort, and it doesn’t disappoint. An elegant two-tier room with brocaded banquettes, a wrought-iron chandelier, and windows overlooking the rolling greens of the golf course is the stage for rotating menus that apply French cooking techniques to the best quality seasonal ingredients. Appetizers might include a superb French onion tart—a holdover from Le Reve, it’s a must if available—or a delicate lobster risotto. For the main courses, you might find roasted Branzino (a Mediterranean sea bass) with a zingy ginger-chile glaze or tender pheasant with crispy skin. Service is Texas friendly but also more elaborate than is typical for San Antonio. Probably no other restaurant in town offers a choice of citrus, cucumber, and mint for your water, or punctuates your meal with an amuse bouche, a palate cleanser, and post-prandial truffles. All in all, this is perfect for a romantic occasion splurge or for hosting a client you’d like to impress.
