I can vouch for the Hamachi sashimi with shitake mushrooms and whatever preparation he lands on for the beef short ribs. Unless you’re a picky eater, go for the prix fixe menus with matching wines for the best take on Knibb’s style. Save room for pastry chef Rachel King’s varying flavors for panna cotta, mousse, or seasonal sorbets. The casual, sophisticated setting, in the aptly named Grand Colonial Hotel, encourages lingering whether in the high-ceilinged, mahogany-accented dining room or the outdoor patio. Breakfast and lunch are available as well, with a half-hour break between the two meals and a longer break before dinner.
