Restaurante Altamira
Noted for its Cantabrian specialties, this hotel-restaurant is the best place in town to eat a full meal. The menu emphasizes the inland dishes of the region, notably “meat of the pasture”—as in lamb, mutton, veal, and beef. The grasses are thick and nutritious around Santillana, and the local meat is outstanding. The different stews, known as cocido, are always a good bet. Unlike the Madrid version, they emphasize either a lot of fresh vegetables or a lot of legumes. The cocido montañes is a little richer and meatier, containing bacon, sausage, pork ribs, lots of shredded white cabbage, and the local white beans.
