If the sheer spectacle of an evening lounging in the Campo isn't enough, the Enoteca Italiana is the only state-sponsored wine bar in Italy, in vaults that were built for Cosimo de' Medici in 1560. Drink by the glass or buy one of 1,600 bottles on sale. Enoteca I Terzi, Via dei Termini 7 (tel. 0577-44-329; www.enotecaiterzi.it) is under the vaulted ceiling of a 12th-century tower, and sells fine wine by the glass. For something younger and more local, head down Via Pantaneto ★ toward the university buildings. Names may change, but bars down here go on till late.
