
Le Bibent
Originally opened in 1861, right in the heart of Toulouse in the place du Capitole, Le Bibent is a glorious example of a classic brasserie. The huge room has a vaulted ceiling, painted panels, gilding galore, mirrors, chandeliers, and banquette seating. Taken over by starred chef Christian Constant in 2011, in 2021 he passed the reins to his second, Yann Ghazal, who is not yet as accomplished a chef (our last meal had many hits, but a few dishes that were simply pedestrian). Still, the ambiance alone here makes it worth a visit, and we can heartily recommend Le Bibent’s copious breakfasts, its Caesar du Bibent salads (a good lunch), and the excellent grilled squid with ratatouille.
