Turin has gotten in on the food-hall trend with EDIT (an acronym for Eat Drink Innovate Together), a massive two-level space in what was once a cable factory, located in a gentrifying area just north of the city center. Here, there’s a bakery/cafe, pub, cocktail bar, brewery, as well as a trendy restaurant managed by Christian and Manual Costardi, known as the “kings of risotto.” In a sleek post-industrial space with an open kitchen, the Costardi brothers put the focus on Italian and regional specialties like slow-cooked veal cheek, cod ravioli in an onion broth, and cappellacci pasta filled with mushrooms, served with a cheese and hazelnut sauce. A special risotto on the menu features ingredients from around EDIT, including beer from the brewery.
