When the bar grows its own herbs in a hydroponic unit under the counter, you know it’s a place that takes its drinks very, very seriously. But that’s no surprise when the owner is Shawn Soole, barman extraordinaire. Not only did he name his restaurant after the establishment founded by the legendary 19th-century bartender “Professor” Jerry Thomas, he’s built a back bar of more than 300 bottles and offers an ever-changing list of inventive and classic handcrafted cocktails. Still, the cocktails aren’t the only reason to venture down the hall to this cozy place. The menu features hearty fare like roasted bone marrow and gnocchi in brown butter, and an ever-growing wine list.
