A rare Disney restaurant overseen by a culinary celebrity; in this case, Todd English, known for rich flavors. Eaten among witty colored-glass baubles that suggest being underwater, the menu changes but the focus is fresh fish. The nightly herb-rubbed “dancing fish” is grilled on a spinning skewer (watch them spin alongside the raw bar); the light clam chowder comes infused with bacon; and the 2-pound “Cantonese” lobster is painted in a sticky soy glaze that must be shared.
