You will find as many locals in this classic restaurant as tourists. Part of the boutique Hotel Cervo, the main appeal here is simplicity. Chef Seraina Lauber takes traditional Swiss recipes and reinvigorates them, using the freshest seasonal ingredients, many of which have been grown in the chalet's own vegetable garden, to create a perfect blend of old and new. Try the caramelized cheese from the village of Dallenwil, served on a beetroot and leaf salad with smoked pecans; then the black cod with white pine needles, elderflowers, and black rice; followed by meringues and pickled apricots and almonds with lavender cream, or an array of homemade ice creams and sorbets. Combine those scrumptious dishes with crisp, modern-rustic décor, breathtaking alpine scenery (especially from the modish terrace), and a reliable selection of fine local wines, and you will be guaranteed a meal to remember.
