I have two suggestions that will help you get the information you are looking for.  First, post this in the Cruises forum, under Tips Tools and Deals.  Second, and most importantly, go to cruisecritic.com, the site for all things cruise.  You can find out literally anything about any cruise there.

We will be sailing on the Costa Meditteriania  departing 9/18/15 out of Venice for 7 nights with stops in Trieste Split Kotor Serbia and Montenegro Angostolion Greece  Corfu Greece and Dubrovnik Croatia What do you think will be the best tours for this itinerary? Will we be able to get our own guides at each port of call? We are interested in the culture not the beach or boat ride adventures Also we are flying into Milan that day and will take the train to Venice Do you advise we check in with the ship first and then go back into Venice b/c the ship does not depart until 10 pm? We won't spend too much time in Venice but will have a few hrs and of course we will return back to the ship by about 6 PM After the cruise we will have a few more days to explore on our own. Any suggestions as to where to go.   Here's a bit more info on the cruise timing: Trieste from 7am - 7 pm Split Croatia from 1pm - 7pm Kotor Serbia and Montenegro from 8am - 1 pm Argostolion Greece from 10 am - 830 pm Corfu Greece form 7 am to 4 pm Dubrovnik Croatia from 7am - 1 PM    Any specific suggestions you can offer that you feel we should see at these ports of call would be greatly appreciated!

Some suggestions: if you have the funds for personal guides, you can, of course, get them. But that's a might pricey undertaking and sometimes even the guides that get good reviews online can be dull or uninformative. It's less of a risk (financially) to do a small group tour and you can find those through such companies as CruisingExcursions.com or ShoreTrips.com. Or pick up some e guidebooks and simply hit the sights on your own. You can do so in many of thse cities. And you'll find complete reviews of the highlights of those destination on this website, so you may want to start your research there.

I hope this has answered some of your questions. Really, a lot depends on which sights most interest you, since these port stops are so rich, and sometimes your time is limited.

On the question of checking in to the boat first: I think that would be a time waster. Find a hotel that will hold your luggage for you, explore and then make your way to the boat a few hours before the sailing (most will have specific times that you need to check in by).
