Itinerary help for 10 days in August with a toddler and a baby

Hi there, we will be in Ireland for 10 days in August and I would love some assistance planning an itinerary. We are flying into Shannon, will be renting a car the whole trip and will be flying out of Dublin, and we have a toddler and a baby (2 and 5 months at the time of our trip). I would love suggestions on activities and towns to explore as well as specific hotels, B&Bs to stay that may be more family-friendly/spacious!

I am tentatively thinking the following: arrive in Shannon, either 1 night in Adare or just stop to explore somewhere around there and just go straight to Cork for 2 nights, 2 nights somewhere in County Kerry, 2 nights in Dingle, 1 night in Doolin or Ballyvaughan or Kinvara, 1 night in Galway, 2 nights in Dublin. Alternatively, we could somewhat reverse this - Galway, Doolin, Dingle, County Kerry, Cork - and end in Dublin. 

With our toddler, we can't do too much driving without stopping to let her run around, so suggestions for places to stop would be appreciated (although we can do longer 2-3 hour drives from one place to another without stopping during her naps).
