The best food in Albi is served by Georges Muriel Bermond, who believes that menus, like life, should change with the seasons -- which explains the restaurant's name. The service is always competent and polite in his two simple dining rooms. Fine-tuned menu items include delicious fricassee of snails garnished with strips of the famous hams produced in the nearby hamlet of Lacaune, and ravioli stuffed with pulverized shrimp and served with truffled cream sauce. Most delectable of all -- an excuse for returning -- is pot-au-feu of the sea, with three or four species of fish garnished with crayfish-cream sauce. The wine list is the finest in Albi.
