If you opt to dine here, the loudest noise you'll hear -- other than the clinking of porcelain and glassware -- is the sound of splashing waves. That's because part of the restaurant is built on pilings sunk into the beachfront, granting diners an unimpeded view over the Caribbean and Antigua's westward-facing headlands, including Indian Mountain. Because it's within an all-inclusive resort, management urges diners who aren't staying at the hotel to phone in advance of their arrival. Diners eat at tables sheathed in azure-colored tiles. Lunches are simpler than dinners, focusing on salads, burgers, sandwiches, and pastas. The best dinner items are usually the grilled catch of the day, marinated and covered with butter. Also recommended is grilled mahimahi prepared in puff pastry like a beef Wellington and served with a slow-simmered Creole sauce of fresh tomatoes, sweet garden peppers, and onions.
