In deliberate contrast to the arid scrublands that surround it, the institution is an air-conditioned refuge of thick plaster walls, pinewood panels, and good old Teutonic gemütlichkeit (well-being). Appetizers include avocado filled with crabmeat and shrimp, escargots in herbal garlic butter with shallots, and Dutch pea soup. Main courses include beef stroganoff, pasta, Wiener schnitzel, and roast duck with orange sauce.
