If you're a carnivore who dreams of eating roasted meat straight off the spit, Amazonia will make your dreams come true. This is one of several increasingly popular gaucho-style restaurants in Aruba where you can eat unlimited servings of grilled Argentine beef, chicken, and lamb. The setting is rustic-casual with a definite machismo flair -- lots of tanned leather and wood in both the sizeable interior and along the wraparound porch, where you can dine in the warm glow of two Olympic-size torches. The first course is a full-on salad bar complete with soup, sushi, stroganoff, and more. But don't fill up on starters. On your command, a parade of dapper servers show up carrying every imaginable cut of meat stacked on enormous swordlike skewers. They either slide or saw off a chunk for you to sample, and keep returning to deliver new tasty morsels of your favorite cut.
