Frommer's Review

The Essex Resort & Spa, about a 15-minute drive from Burlington, offers both formal and informal dining rooms with meals prepared by chefs from the New England Culinary Institute. It offers both formal and informal dining rooms with meals prepared and served by New England's rising culinary stars. The two inn restaurants are housed in a large faux-farmhouse complex along the fringe of Burlington's suburban sprawl; inside, the setting is quiet and comfortable. In the light and airy Tavern (that's its name), you may be tempted by nachos, Yankee pot roast, seared scallops, prime rib, lasagna, buffalo wings, gnocchi, or salmon-crab cakes. Amid the more intimate, country-inn elegance of Butler's, the dinner fare is a bit more ambitious, with entrees that might run to a cheese flight (including a twice-baked Grafton cheddar soufflé), a pave of sole or salmon, grilled lamb chops, pan-roasted duck, and a number of seafood specials. There's also a Sunday brunch buffet; ask about kitchen tours, too.
