Relaxation and elegance are virtually guaranteed the moment you step inside this formal dining room, which serves the city's finest French cuisine. The service is formal and efficient, yet friendly and not intimidating. Some of Charlotte's rising young professionals take their favored business clients here for dinner. "We're not New York, but we're getting there," one of them said to me. The cooking is worth traveling across the city to sample, and the chef is especially talented in handling seafood from the Carolina coast, although beef and veal dishes are also prepared with flair. Much of the menu depends on the inspiration of the moment. Signature dishes include salmon pistou, filet mignon, and rack of lamb.
