Piazza della Repubblica is your dining backdrop if you come in warm weather and plunk down the extra charge for one of the alfresco tables under this restaurant's namesake little loggia overlooking the main square. If you choose to sit indoors, you'll be in 16th-century stone-and-brick wine cellars. The verdure grigliate (grilled vegetable slices under oil) as an antipasto will make you feel healthy even if you order the succulent bistecca fiorentina as a secondo (it goes excellently with roast potatoes). In between, consider the risotto zucchini e scampi or the ravioli gnudi alla fonduta di tartufo, "naked ravioli" -- just the ricotta and spinach stuffing -- which is good even if the fondue sauce masks the delicate flavor of the truffles. The new owners, bucking Italian trends, have actually lowered prices a bit.
