This is one of the five restaurants nestled into the weather-beaten core of the island's oldest fort, and it's thrived here for more than a decade. As the name implies, a replica of a Renaissance-style pergola enhances the decor. The kitchen and one of the three dining areas are in the cellar; two others benefit from streaming sunlight and a view over the seafront. Menu items change virtually every day, and all use truly authentic recipes. The best examples include gnocchi of chicken, fettuccine Giulio Cesare (with ham, cream, and mushrooms), a succulent version of grigliata mista (mixed grill), and a top-notch preparation of exotic mushrooms, in season, garnished with Parmesan cheese and parsley. The red snapper in extra virgin olive oil and garlic is a palate pleaser. Looking for something a little different? Ask for maltagliata (pasta cut at random angles and lengths) served with either Gorgonzola sauce or Genoan-style pesto. The lobster dishes, including lobster with olive oil and garlic and black pasta with lobster and squid, are among the best on island. In addition, a dozen pizzas are available.
