Just about the most discreetly located major restaurant in the country, it nestles unobtrusively in a quiet Chamberí street just a two-minute stroll away from his former locale. Among his many highly inventive dishes, keep a special eye out for the tosta de lenguado y láminas de boletus con crema de ajo ("toast" of sole with razor-thin slices of boletus mushrooms cooked in garlic sauce) and crema de calçots con huevo frito y vieiras (cream of calçots with fried egg and scallops). To accompany your meal there's a mind-boggling choice of over 500 hand-picked wines, including some of the very best vintages from Spanish and international vineyards.
