The mold-breaking Catalan chef Ferran Adrià created all the dishes on the menu here and flies in regularly from his world-famous Bulli restaurant on the Costa Brava to see that his cooks are following his orders. His deluxe eating spot lies on the top floor of Madrid's Casino, a former gents' club whose history goes back the better part of a century; and his exquisite ever-changing culinary creations gravitate from one taste explosion to another. The panoramic city views from this culinary mecca are outstanding too -- get to the top by elevator or via a grandiloquent 19th-century stairway. Fresh seasonal ingredients are used to create his dishes, such as raya in oil and saffron with parsley purée and nuts on a bed of finely diced fries. More traditional dishes include the succulent merluza a la gallega (Galician hake), crema de la fabada asturiana (creamed Asturian bean soup), and the steeply priced jamón Jabugo (cured ham from acorn-fed pigs) served with menestra (mixed vegetables) al dente. Only French champagne and Spanish wines are listed, some of the heartiest reds coming from the Ribera de Duero province of Castilla y Leon, near Valladolid.
