Largely unknown to outside visitors, this culinary oasis in the earthy northernly suburb of Fuencarral (a town in its own right 2 centuries ago) is the second-oldest restaurant in Madrid -- after Sobrino de Botin. Founded in 1825 as a modest eating house for passing travelers, it was first known as La Casa de la Silvestra and then La Casa de la Pascuala in honor of the consecutive chunky Amazons who supervised its ever-busy kitchen. In the 1940s it acquired a new patron who upgraded its menu and standard of fare, and today it's entering its fifth generation of family ownership. The restaurant is divided into several different sections (separate rooms of the original house), where from its array of Castilian asados (roasts) you can savor a mouth-watering conejo (rabbit) dish that's considered by many to be the best in Madrid.
