Jose Gutierrez is one of the best-known chefs in Memphis. After manning the stoves at The Peabody's posh Chez Philippe for more than two decades, he opened Encore in late 2005. By design a casually upscale, affordably priced fine-dining restaurant, Encore succeeds on all counts. A soothing, Zen-like ambience pervades the sophisticated dining room, with dark woods and dramatic, back-lit curtained walls. Gutierrez, an award-winning chef born in Provence, France, shows relaxed versatility with the menu, offering such eclectic entrees as bouillabaisse; New York strip with pommes frites; and a roasted leg of lamb with "poor man's cheesy potatoes." A burger here will set you back $10, a bargain for ground-to-order sirloin topped with bacon bits on a scratch-made roll, with choice options as roasted red-pepper aioli, and blue, Gruyere, or cheddar cheese. Soups, salads, and starters are equally enticing: proscuitto-wrapped asparagus bundles are served with coriander vinaigrette, while chorizo sausage spices up the hearty French lentil soup. Crème brulee, sorbets, and other desserts are first-rate. Encore also has a full bar and well-chosen wine list.
