In a vaulted dining room in the center of town, Cyril Paysserand showcases his culinary wares. It's close to the Ingres Museum and makes an idyllic luncheon stopover. His cuisine uses market-fresh ingredients, and his cooking is sublime, often with imaginative touches. One of our favorite dishes is the sautéed foie gras with mango chutney and cashew nuts. You might follow with a delectable plate of sweetbreads with artichokes and truffles. In season, woodcock is a special feature.
